Love this polished cast iron!
I have been using cast iron for a long time, but this is my first polished surface cast iron. What a difference!!! I use this skillet daily. My husband even asked, “So, are you just going to use that one now?” I said, “Yep! I love it.” I’ve stopped using our high dollar hex-type hybrid skillet in favor of this one. I just made chicken and scrambled eggs before writing this review and the skillet wiped clean when I was finished. If it needs more cleanup it cleans SO easily with warm water. I have been using a chain mail scrubber on it just to keep away the chance for it to become sticky with over oiling. I can make perfect over easy eggs with no problem. I use avocado oil to season it after washing- thanks for the tip about very light coats of oil. That’s been working perfectly.
We have gas stove and I notice a more even heat with this skillet than other cast irons. It’s still warmer in the center but doesn’t seem as cold on the edges.
One of the things I appreciate most about this skillet is the very reasonable weight for the size. It is so much lighter than another brand’s single handled cast iron in a similar size. The dual handles and the handle shape help considerably with making sure I can get and keep ahold of this skillet if I’m draining grease or transferring food out of it.
The final feature I love about this skillet is how beautiful it is. Mine has lost the factory seasoning inside and has taken on its own patina instead. The outside is still the beautiful…
