Absolutely, one of the benefits of cooking with cast iron is that it is at home in high heat environments.
I have only used my griddle a handful of times. I have cooked bacon and I made some pancakes. After a few uses of cooking bacon on it I finally decided to try out pancakes and it did wonderfully. I look forward to adding to my collection. I have told my family if they want to surprise me they can buy me a new piece of cast iron.
So the first time I used my number 12 flat skillet nonstick, the pork tenderloin stuck to the pan so bad that it ripped off the entire coding down to a Silver, base. A lot of the stick free season coding that did not touch the pork tenderloin turned black. Apparently, I had the heat too high. My whole life when I wanna share a piece of meat, the higher the heat the better. Apparently that’s not true with this piece of equipment. However, after contacting the company they’ve offered to re-season it. I’m quite happy about that and I’m certainly willing to give this another try. I have a ton of plans for it as I do a lot of cooking. So I have my fingers crossed at this point.

I have been buying skillets and needing to replace them every few years because they would warp or chip. I bit the bullet and bought a well made pan. Needless to say I love it. I don't think I will ever need to replace it. You get what you pay for here and I highly recommend.
Made the best grilled cheese. I also use it to transfer, like a steak or fish filet into the oven, while I make a sauce in the skillet for either.
