Astounding Pan!
I purchased this pan after some research, wanting an heirloom-quality #12 to replace a vintage Wagner that was bowed. My #10 is a Griswold from the 1930’s, and I wanted a pan of equivalent quality. I also use hex clad for non sticks, and allclad for stainless…. But since I received this pan, it’s all I can use. I’ve purposely been selecting dishes that are suited for cast iron. I couldn’t be happier.
Initially, the pan is absolutely stunning to look at. I leave it on my stovetop instead of putting it away. So far, I haven’t had anything stick to it, although I’ve been avoiding eggs and making sure to use plenty of fat. I love the smooth milled cooking surface… I know it’ll probably take longer to build up mature seasoning, but it’s well worth the time. Cooking with it, cleaning it, and maintaining it is a labor of love. I also appreciate their engraving option… this is definitely a pan my son can pass down to his grandkids. I loved the product and the brand so much that I bought my dad the deep farmhouse skillet for his birthday… it’s been sitting on my counter for the past week and it’s taking all of my will not to cook with it too! If Smithey makes a version of any type of cookware I need going forward, I’ll definitely buy Smithey!
