Yes, you can set the burners to two separate heat levels. However, for best results, we recommend starting by preheating the griddle by setting both burners to medium heat for approximately 10 minutes. Once the griddle has reached a consistent temperature (you can conduct a sizzle test with a little bit of oil or water), you can adjust the burners as needed based on what you are cooking.
To minimize hot spots when cooking with the griddle, it’s important to allow the surface to fully heat up. Cast iron is slower to heat but will reach a consistent temperature when given time. Start by setting both burners to medium heat and let the griddle preheat for approximately 10 minutes. This will allow the heat to spread consistently across the cooking surface. Once preheated, you can adjust each burner individually based on what you are cooking.
The small channel or moat around the perimeter of the griddle is designed to collect excess grease, oil, or food juices. This helps provide a cleaner surface while cooking.

Cooked a redfish last night. Nice even heat, easy to control. Downside is that it seems to retain fish smell pretty strongly.
The quality and beauty of this griddle is unmatched! I already had many Smithey pieces so I knew it had to be awesome and definitely built for generations! I have used it on my glass top at home as well on induction at work and it performs great on both! So far I’ve made many very large family breakfasts on it as well as some hibachi styled steak with rice and veggies on my outdoor grill and I am OBSESSED! Picking up seasoning nicely! If you are thinking about getting it…DO IT!
