We’re often asked to explain the difference between cast iron and carbon steel skillets. Both retain heat exceptionally well and go from stovetop to oven to table. A Superb Skillet

Okay, it is the heaviest skillet I have ever owned, but its inaugural dish was perfect. I seared a thick ribeye and finished it in the oven. The heat was perfectly distributed and the beef was amazing. The beautiful bronze-like polished surface is now silver and disfigured but completely smooth and ready for the next task.
