We’re often asked to explain the difference between cast iron and carbon steel skillets. Both retain heat exceptionally well and go from stovetop to oven to table. Both arrive at your door pre-seasoned and ready for cooking. Carbon steel is a bit lighter and heats up a little faster – perfect for the day’s catch of fresh trout to green beans stir-fried from our garden. I’ve tried various cast iron pans and carbon steel pans in the past and always had issues with them. Smithey’s is the first one that I’ve found that was easy to use and I’ve not had any issues with rust or food sticking. Just make sure it’s dry after washing and that there’s sufficient oil in the pan while heating up. The stainless steel mesh scrubber makes it easy to clean and keeps the seasoning in the pan. Be aware that standard 12” lids will not fit so best to buy it at the same time as the pan.

Love the size, big enough to fit four steaks for a family of four or Brussels sprouts for 8 without being too big. Not sure I would go the next size up
I have never had a pan that stays on my stove before, but this pan does not get put away. I bought it to replace my non-stick pans, which I was tired of replacing every year or two. This cast iron completely fits the bill and I am enjoying learning cook with it.
