My "second" 11 inch Smithey is the "first" pan I grab for almost everything! I absolutely love everything about it, but above all it's non-stick surface. It's so easy to use and clean. And it's gorgeous!

I was surprised that my new skillet was not seasoned but then I realized it was a factory second. I seasoned it. My first effort was a cornbread recipe from ATK's Bread Illustrated. My wife is from Connecticutt and, while I like her cornbread, it is like corn cake. I made the cornbread to go with some beans and it was perfect. I've used a lot of cast iron over the years and this pan can replace all of them except for my comal. I even tried to polish some of the other cast iron pans without much success. I am happy that I can buy one that is already smooth. I already gave my 10 inch pan to my son which is why I bought this one. You can tell if a gift is a good one if you don't really want to give it away.
Beautiful skillet! I cannot find the flaws in the skillet and I am looking forward to completing additional purchases in the future.
