Little Farmhouse carbon steel skillet
This is our first piece of Smithey cookware. What a terrific skillet! Remember when fried eggs had a crispy edge and the yolk was just right? Then came Teflon and frying eggs changed forever...until Smithey! Mostly, I cook egg whites...six of 'em every morning. Crispy edge and bottom. No scorching, or burning, just a wonderful crunchy brown with a firm top.
Cleanup is easier than simple. Let it cool and wipe with a clean, dry paper towel, and I'm ready for next time.
Now to decide on the next piece to add to our Smithey heirloom collection.
