Garlicky & Smoky Grill Butter
Use to baste or brush on grilled foods such as corn, zucchini, shrimp, and oysters.
Makes 10-12 servings
Ingredients
8 ounces (2 sticks) unsalted butter
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne
1 1/2 teaspoons minced garlic (from about 3 cloves)
1 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
1 large strip lemon peel
1 tablespoon chopped parsley
1 tablespoon chopped chives

Melt butter over low heat in a 1-Quart Sauce Pot. Whisk in spices, garlic, salt, and lemon zest. Cook for 5 minutes, stirring over low heat, to allow flavors to meld. Remove from heat and stir in fresh herbs. Use immediately, or let cool and refrigerate for up to 1 week (re-melt before using).
